🍣 πŸ§„ CREAMY GARLIC SALMON πŸ§„πŸ£

A repost of my usual Fishy Thursday meal.. πŸ˜‚ for me it’s a meal out to celebrate my daughter leaving home for uni πŸ˜‚

Fishy Thursday in our house today and trying a new recipe, it’s from the new @pinchofnom comfort food book but like usual I’ve just changed a couple of the quantities to suit.

Recipe served 3 using just over 1 HexA each πŸ§€

Spray a large frying pan with @frylighthq and add 1 thinly sliced onion, 3 cloves crushed garlic, 250g mushrooms and lightly fry for a few minutes until softened.
Then add 1 tsp white wine vinegar, 1 tsp Dijon mustard (0.5 syn), 1 tbsp Worcestershire sauce, 400ml fish stock – using 1 @knorruk cube. Simmer for 10-15 minutes until the stock has slightly reduced and stir in 150g pot of @eatlean spreadable cheese πŸ§€ – (90g is 1 HexA), once melted add 500g of salmon fillet (cut into large pieces) cover and simmer for 7-8 mins taking care not to break up the salmon.

Season with black pepper and parsley.

I served with basmati rice and crispy broccoli – sprayed with @frylighthq , seasoned with salt & black pepper and cooked in the oven for 7-8 mins broccoli πŸ₯¦
