🧡DIJON PORK & POTATO PIE🧡
I was really in the mood for mash tonight and I had the pork out of the freezer so created this beauty 😊 I got my inspiration from the @pinchofnom dijon pork recipe and put my spin on it 🏼🏼🏼
Recipe serves 4 – using 1 HexA each and 1 syn.
To a large frying pan sprayed with low cal spray….Lightly fry 1 large sliced onion until soft, add pinch salt, black pepper, 1 clove of crushed garlic, stir and add 600g of lean diced pork, lightly brown.
Then add 170g sliced mushrooms, 3 tbsp Dijon mustard (2 syns) and 200mls of stock – using 1 low salt chicken stock cube.
Simmer for 30 mins and stir in 3 @thelaughingcow_uk lightest triangles (1/2 HexA) stir until melted, transfer to an oven proof dish, add the cheesy mash to the top and sprinkle over 60g of red cheese (2 HexA).
Baked in the oven for 30 minutes.
🥔 Cheesy mash is just potato, mashed with 1 beaten egg and 40g of @asda 50% fat mature cheddar, finely grated (1 HexA)
I served with garlic parmesan green beans, mushy peas & @aldiuk beetroot salad
